Sunny Side Up Eggs with Colorful Veggies

When it comes to sunny side up eggs, I need the whites fully set and the yolks perfectly runny – so that once you break them, they bring all the flavors together into one delicious bite.

Here, the magic happens with fried eggs on a bed of spinach and colorful bell peppers – the perfect Sunny Side Up Eggs with Colorful Veggies ☺️

The secret to making them just right? Crack the eggs carefully, cook on low heat, and cover the pan with a lid!

Ingredients
  • 1/2 medium onion (~50 g)
  • 1/2 red bell pepper (~80 g)
  • 1/2 yellow bell pepper (~80 g)
  • 4 white button mushrooms (~80 g)
  • 1 can diced tomatoes (drained)
  • 4 handfuls fresh spinach (~100 g)
  • 4 large eggs
  • 2 tbsp olive oil (~20 ml)
  • 1 small bunch chives (~10 g)
  • 1/2 tsp sweet paprika
  • 1/2 tsp garlic powder
  • Salt & black pepper to taste

Sunny Side Up Eggs Step by Step

  1. Slice the onion into thin strips, mushrooms into slices, and peppers into half-strips (cut lengthwise into strips, then in half).

  2. Heat the olive oil in a skillet. Sauté the onion with mushrooms, then add peppers and drained tomatoes. Stir and cook together for about 5 minutes.

  3. Add fresh spinach and the spices. Stir, cover, and let the veggies cook until the spinach wilts down. Meanwhile, chop the chives.

  4. Make 4 small wells in the pan and gently crack the eggs into them. Sprinkle with chives. Cover the skillet and cook on low heat for about 3 minutes, until the egg whites are set.
