Green omelette with tuna and olives is a healthy breakfast with spinach in an unexpected form 🙂

Ingredients
  • 1/4 medium red onion (~25 g)
  • 1/4 yellow bell pepper (~40 g)
  • 3 handfuls of fresh spinach (~75 g)
  • 2 eggs, size L
  • 6 black olives (~15 g)
  • canned tuna, drained (~50 g)
  • 1 tablespoon olive oil (~10 ml)
  • chives (~10 g)
  • salt, pepper

How to make an omelette with tuna?

Chop the onion, bell pepper, and olives. Drain the tuna. Blend the eggs together with spinach, seasoning with salt and pepper.

Heat a pan with olive oil, sauté the onion and bell pepper. Add the tuna and olives, stir, and fry everything together.

Pour the blended eggs evenly over the pan, covering the rest of the ingredients.

Cover the pan and cook the omelette over low heat for about 5 minutes, until the surface is set.

Transfer the cooked omelette to a plate and sprinkle with chives. Enjoy!
