Fluffy, perfectly sweet without added sugar, and quick to make. Banana oat pancakes are one of our favorite breakfast options. Add some fresh fruit and a spoonful of peanut butter or pistachio spread—mmm… Plus, bananas rarely go to waste in our home anymore 🙂

This recipe makes about 15 pancakes.

Ingredients
  • 1/2 cup rolled oats (60 g)
  • 1/3 cup all-purpose flour (50 g)
  • 2 ripe bananas
  • 2 large eggs (size L)
  • 1/4 teaspoon baking soda
  • 3 tablespoons oil

How to make banana oat pancakes

Grind the oats.

Blend the bananas with the eggs in a bowl.

Add the remaining ingredients and mix everything with a blender or a whisk.

Spoon the batter onto a hot, dry skillet and cook over low heat with a lid on for about 2 minutes on one side.

They taste best slightly cooled on a wire rack 🙂
